Join Karen O’Donoghue founder of The Happy Tummy Co along with Mescan Brewery’s Cillian Ó Móráin and the Marine Institute’s Hugo Maxwell, live online as we delve into a big discussion on the future of food, farming, and the enormous impact of the seemingly simple choices we make every day.

We’ll meet the food producers who are choosing to make food differently as they share insights from farm to fork, and discover how collectively we can all work together to shape a more positive future – not just for our tastebuds but for our planet too.

About the speakers

Karen O’Donoghue:
Karen is the founder of The Happy Tummy Co. In 2018 she was named Gut Health Specialist of the Year, and sits as a judge on the World Bread Awards. Her signature loaf has eradicated the IBS symptoms of thousands of people across the UK. Most recently she has set up a school in Westport, Ireland to address gut, mental, and sexual health issues.
Cillian Ó Móráin:
Cillian Ó Móráin is the co-founder of Mescan Brewery in Westport. It is situated on the slopes of Croagh Patrick and is owned and operated by Cillian and his partner Bart Adons. Originally two Westport vets who have been friends and colleagues for nearly 20 years, the pair spent four years perfecting their original recipes inspired by the beers of Belgium, Bart’s homeland before starting to brew commercially in 2013.
Hugo Maxwell :
Hugo Maxwell is a marine scientist, working on *wild* Atlantic salmon population dynamics and bluefin tuna telemetry research.
He is an ex- trawlerman who decided to study marine science in order to increase his understanding and knowledge of oceans and their contents. Hugo studied marine ecology with a soupson of oceanography through a joint Nordic program with the universities of Bergen, Århus, Iceland and The Faroe Islands. He is currently employed with the Marine Institute in Mayo as a Scientific and Technical Officer.
